🛒 Ingredients

8 large flour tortillas
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup diced bell peppers
1 cup corn kernels
1 cup black beans, drained and rinsed
½ cup diced red onion
2 cloves garlic, minced
½ tsp smoked paprika
½ tsp cumin
¼ tsp chili powder
Salt and pepper, to taste

🍳 Instructions

Preheat oven to 375°F (190°C).
Sauté bell peppers, onion, and garlic until softened.
Stir in corn, black beans, and seasonings.
Lightly grease a baking dish.
Layer tortillas, veggie mixture, and cheeses.
Cover and bake for 20 minutes.
Uncover and bake until cheese is bubbly and lightly golden.
Let cool slightly before slicing.

🗃️ Storage

Refrigerate leftovers in an airtight container for up to 4 days.
Reheat in the oven at 350°F or in the microwave.
