🛒 Ingredients

1½ lbs breakfast sausage
9 large eggs
½ cup water
2 tbsp mayonnaise
1 tbsp sour cream or Greek yogurt (optional)
9 slices bread, cubed or 5 cups hash browns
2 tbsp melted butter or bacon grease
2½ cups shredded cheese, divided
¾ cup plain breadcrumbs
2 tbsp melted butter (topping)
Salt, pepper, garlic powder, paprika

🍳 Instructions

Preheat oven to 350°F (175°C). Grease a 9×13-inch dish.
Brown sausage and drain grease.
Whisk eggs, water, mayo, sour cream, and seasoning.
Toss bread or hash browns with melted butter.
Mix sausage, egg mixture, bread, and half the cheese.
Spread evenly into dish.
Top with remaining cheese and buttered breadcrumbs.
Bake uncovered 50–60 minutes until set and golden.
Rest 10 minutes before slicing.
